VINIFICATION
Morning harvest, light press maceration, and a delicacy pressing. Stabulation during 7 days with low temperature below 5°C. Tight settling and fermentation in concrete tanks at 14°C. Racking. Ageing on lees during 12 weeks.
TASTING NOTES
Appearance : Clear yellow colour with emerald shades.
Nose : The nose exhales lychee and mango aromas with delicate and subtle notes of rose petals.
Palate : This cuvée expresses the quintessence of Rolle. A rich, complex and very generous wine that reveals exotic fruits aromas. A beautiful length with a very long-lasting aromas.
FOOD PAIRINGS
To be served with a St Pierre fillet, a roasted veal rib with Provence herbs or the Banon, a typical cheese from Provence.
