The elaboration of ELEVAE is realized thanks to a fine and delicate blend of three bases of wine. The first one, bringing body and roundness in the palate, is from the thicker part of the juice (suspension) before conserved to a low temperature (stabulation) to 4°C, before to be filtered. Then a second base coming from the alcoholic fermentation in 500L Austrian wood demi-muids (Stockinger) giving complexity. And the third base is from a concrete tank fermentation between 14 and 16°C to reveal aromas. 100% aged during 24 months in Austrian barrels, this cuvee is elaborated with a specific attention and a really meticulous work. Our winemaker makes a regular lees-stirring every two weeks and a topping-up monthly.
Appearance : Attractive mango hue with golden tinges.
Nose : The toasty and spicy nose exudes notes of cinnamon which evolve towards aromas of stewed apricots.
Palate : The direct smooth attack offers swathes of nectarine and peach. The mid palate is rich and indulgent with delicate notes of spice and acacia honey. A perfectly balanced and elegant rosé with a very persistent finish. Exceptional length on the palate with lingering notes of vanilla and velvety tannins.
Makes the ideal partner for a grilled, delicately spiced lobster, a truffle and parmesan risotto or mature wagyu beef with Himalayan salt.
