Night harvests, cold direct pressing, fermentation at low temperature: 14°C and then 18°C at the end of the fermentation.
Appearance : Splendid and blazing colour with hints of light lychee.
Nose : The nose is intense with aromas of passion fruit and red raspberry.
Palate : A refined, elegant and refreshing wine. A beautiful structure in the mouth with notes of exotic fruits.
Le Pas du Moine pairs to perfection with oysters, a salmon/shrimp/avocado/pomelo pokebowl, melon with cured ham or sea bream ceviche or as an aperitif.
Serving : Ideal as an aperitif, to serve between 8°C and 10°C
